I have been able to expand my knowledge through my work at the University of
Ljubljana while exploring the culture and beauty of this wonderful, little county. It is
very enjoyable working with Dr. Tanja Pajk within the Biotechnical Faculty as she
has introduced me to various research opportunities. The technology we have
been using to practice this area of food science and research leaves me with
unlimited opportunities for the next weeks I am here. Currently, I have been
assisting research on dietary fiber with specific foods, such as algae. The ability to
use enzymes that are produced in the body to destroy specific macronutrients
within a sample resulting in the discovery of dietary fiber is absolutely spectacular.
The members of the Biotechnical Faculty have done everything possible to help
me gain as much as I can from this experience.
The recommendations for food, fun, and adventure they have given me has also provided more ways to enjoy
Ljubljana and the beautiful culture surrounding it. A few of my favorite pastimes here include outdoor concerts,
the Odprta Kuhna (Open Kitchen Market), walking around the City Centre, biking through the park, and chatting
with friends at small coffee shops. The charm of this city and the people in it make me look forward to everyday
and my work at the University is helping me achieve my goals as I continue to learn all that I can about nutrition.
